What Are The Grades Of Cashew Kernels Based On?
The Raw cashew nuts after being processed into Cashew Kernels will be graded. In Viet Nam cashew industry grades cashew nuts based on the following cashew nut quality standards below:
- The Association of Food Industries of New York (AFI’s),
- TCVN 4850: 2001 – Vietnam cashew nuts kernel and technical request,
- Combined Edible Nut Trade Association (CENTA), UK and
- Grade specifications as followed by the CEPCI

AFI classification of cashew kernels:
- First Quality Fancy Uniform kernel color that is white, light yellow, or ivory in color.
- Second Quality Scorched – Kernels that are yellow, light brown, ivory, and light ash-grey in color.
- Third Quality Special Scorched – Kernels that are deep yellow, brown, amber, and light to deep blue in color. They may be slightly shriveled, light-brown speckled, blemished, or otherwise discolored.
- Fourth Quality – Kernels would qualify as First or Second Quality, except that they have pitted spots.
- Dessert – Kernels that may be scraped, deeply scorched, shriveled, deep-brown-speckled, black-speckled, blemished, or otherwise discolored.
UNECE classification of cashew kernels:

white, pale ivory, pale ash-grey, and light yellow in color.

The AFI Standard of Cashew Nuts is the Commercial Quality Standards, Parameters, Classification, Abbreviation developed by the American Food Industries Association to standardize the cashew nut product when imported into the US market. However, AFI Standards are now very popular in the cashew industry, they are applied worldwide, not just in the US market. In Vietnam, the AFI standard in the cashew industry is very popularly applied.
TCVN 4850: 2010- Vietnam Cashew Nuts Kernel and Technical Request!
Standard on cashew nuts TCVN 4850:2010 – Vietnam cashew grades is a version of Vietnam’s cashew classification standard released in 2010 compiled by Import-Export Inspection Joint Stock Company, proposed by the Ministry of Agriculture and Rural Development. recommended, appraised by the Directorate for Standards, Metrology, and Quality, and announced by the Ministry of Science and Technology. Standard TCVN 4850: 2010 applies to cashew kernels, which have been preliminarily processed from the fruit of the cashew tree (Anacardium occidentale Linnaeus) for food processing.
Cashew Grade List of 4 Main Type Grading Cashew Kernels Grades
- Whole grades – Whole-grain cashew kernel
- Broken grades – Kernel is broken during the processing of raw cashew nuts
- Scorched grades – Kernels may be scorched, slightly darkened due to over-heating while roasting or drying in a drier

White Whole Cashew Kernel Grades Category
A cashew kernel is classified as a whole if it has the characteristic shape of a cashew kernel and not more than 1/8th of the kernel has been broken off. This grade may also be designated as W. An excessive number of 7/8th kernels or splits that detract from the appearance of the sampled lot may be the basis for the claim.
